 1 lb Pork Tenderloin, cut into 1-inch cubes
 ¼ cup Olive Oil
 ¼ cup Red Wine Vinegar
 1 tbsp Dried Oregano
 1 tbsp Dried Thyme
 1 tbsp Garlic Powder
 1 tsp Salt
 ½ tsp Black Pepper
 1 Lemon, zested and juiced
 2 Tomatoes, quartered
 1 Red Onion, cut into 8 wedges

In a large bowl, combine the pork, olive oil, red wine vinegar, oregano, thyme, garlic powder, salt, black pepper, and lemon zest and juice. Mix well until the pork is well coated.

Marinate the pork for at least 30 minutes, or up to 24 hours.

Preheat a grill to medium-high heat.

Thread the pork, tomatoes, and onion onto skewers, making sure to leave a bit of space between each piece.

Grill the skewers for 8-10 minutes, turning occasionally, until the pork is cooked through and the vegetables are lightly charred.

Garnish with additional lemon zest and chopped fresh herbs if desired.
