 4 Salmon Fillets, about 6 ounces each
 2 tbsp Olive Oil
 ¼ cup Scotch
 ¼ cup Chicken Broth
 2 tbsp Honey
 1 tbsp Dijon Mustard
 1 tbsp Fresh Lemon Juice
 Salt
 Fresh Ground Pepper

Preheat your oven to 400 degrees F (200 degrees C).

Season the salmon fillets with salt and pepper on both sides.

In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the garlic and cook for about 30 seconds, until fragrant.

Place the salmon fillets in the skillet, skin side down. Cook for about 3 minutes, until the skin is crispy and the fish is lightly browned.

In a small pan, whisk together the scotch, chicken broth, honey, Dijon mustard, and lemon juice. Bring to a simmer and reduce.

Pour scotch mixture over the fillets and transfer the skillet to the preheated oven and bake for about 12 minutes, until the salmon is cooked through and the sauce is bubbly and thickened.
