Authentic Maryland Crab Cakes

Introduction

This family recipe is the real deal! They might look simple, but family feuds have been fought over the ingredient list. These cakes can be either pan fried, deep fried, or broiled. The recipe can also be made into mini-cakes for appetizers if desired.

Ingredients

 1 lb Back Fin (Lump) Blue Crab Meat
 ½ cup Saltine Crackers (about 1/2 sleeve per 1/2 cup)
 ½ tsp Old Bay
 ½ tsp Dry Mustard
 1 Egg
 2 tbsp Mayonnaise
 ¼ cup Chopped Fresh Parsley

Directions

Empty crab meat in a large bowl and lightly feel for any pieces of shell. If found, remove.

In a plastic bag, crush saltine crackers until fine but not completely pulverized.

In a separate bowl, combine egg, mayonnaise, Old Bay, dry mustard, and parsley and mix well.

Add crackers and egg mixture to crab and gently combine ingredients.

Form crab mixture into four equal size cakes and cook using preferred method until golden brown
